Whole grain spelt waffles (eggless)

Is it possible to make waffles out of freshly ground spelt flour? 100% spelt, not even sifted or mixed with a lighter flour, just straight up spelt?

If you have ever wondered this, then you have come to the right place. I just plunged right in and made waffles with spelt flour I milled at home. The recipe is quite simple and you can use it for waffles or pancakes!

Now of course there is nothing wrong with combining spelt with modern wheat or other grains. But is there any reason we have to? Most recipes I found containing spelt used equal or greater parts wheat flour (and not always whole!) leaving me to wonder whether spelt could hold up on its own.

These waffles are made of 100% spelt flour and they came out perfectly! They are naturally eggless and get by with a nominal amount of baking soda, which I find impressive. If you wish to make it vegan you can use a non-dairy substitute for the milk and you can tweak the sweetness if you want but you need not wonder whether spelt alone can be trusted to make waffles – it can and it does.

Why spelt? I like to diversify my diet and when I found that the local Amish market carried spelt, I thought, why not? It happens to be slightly higher in protein and some minerals than common modern wheat so there is that – probably there are some micronutrients or combinations that benefit us as well. I say this simply because I believe every edible plant has something unique to offer and so when I can try something new I do. Spelt grows in Ohio, which is not local but perhaps closer than where my wheat and rice come from. [Note to self: should find out.]

 

Spelt Waffles or Pancakes (eggless)

Whole grain goodness of spelt in a easy eggless waffle or pancake.

Ingredients

  • 3 cups spelt – 1 tsp salt – 1/2 tsp baking soda – 2 TBS raw sugar – 2 TBS oil – 2 cups milk – Toppings: chopped fruit and nuts. Butter or maple syrup on occasion.

Directions

  1. Mix dry ingredients, add wet ingredients and mix, making sure to crush all lumps of flour 2. If time permits, let the batter sit for 20-30 minutes. 3. Pour batter to make waffles on waffle iron or pancakes on griddle. 4. Top with your favorite toppings!

If you have a really ripe banana you can just mash it well and mix in in lieu of the sugar. Note that as a grain, spelt itself contains more sugar than wheat – which surprised me because I personally don’t find that it tastes especially sweet. It does have a nutty flavor though not, to my taste, as nutty as einkorn. Actually I find the nutty flavor of spelt comes through more clearly when I cook with whole spelt, as in farrotto than in goods baked with spelt flour. In any case when you eat these waffles, your main source of sweetness will be the fresh fruit toppings (and for nuttiness, nut or nut butter topping). Of course you may in the spirit of tradition use maple syrup on occasion, but if you want to make this an everyday breakfast and not only a weekend festivity, you can freely indulge in waffles by topping them with fruit and nut. Morning breakfast, afternoon snack, post-run energizer, bedtime comfort food … just not all in the same day 😉
