You can call them cupcakes if you want but they are whole wheat and made with brown sugar so they won’t be as light and fluffy as a cupcake. So here you go:
1 1/4 cups whole wheat flour
1 cup brown sugar
1/3 cup unsweetened cocoa or carob powder
1 tsp baking soda
1/2 tsp salt
1 cup warm water
1 tsp vanilla extract
1/3 cup vegetable oil
1 tsp vinegar
Optional: 1 tsp cinnamon powder
Mix it all up and pour into oiled cake or muffin pans. Top with chopped walnuts or slivered almonds if desired.
Place in preheated 350 degree oven and bake for 30 minutes / until done. Top with sliced strawberries if desired.
